Spicy, Skillet Snow Peas

Crisp-Tender Snow Peas Sautéed in Cast Iron with Optional C.S.H. Heat

When you're already cooking over live fire, this is the perfect side to throw down in a cast iron pan and let the coals do the work. These snow peas stay crisp but tender with a bit of char and sizzle, and when you want to add some sweet-heat punch, Ranch & Rifle’s C.S.H. rub brings the flavor. Just be mindful — the earlier you add the rub, the spicier the oil gets.

Ingredients

  • 1 lb fresh snow peas

  • 1 tbsp olive oil or avocado oil

  • Optional: ½–1 tsp Ranch & Rifle C.S.H. seasoning

  • Salt to taste (if not using rub)

Prep Instructions

1. Trim the Peas
Snap off the stem end of each snow pea and pull down the tough string along the seam. This step makes a big difference in texture — no one likes a stringy bite.

Cooking Instructions

1. Fire Up the Big Green Egg
Light your charcoal fire and get your Big Green Egg or preferred grill to a hot, direct-heat setup with no deflector. You’re aiming for that live flame cooking zone.

2. Heat the Skillet
Place a cast iron skillet directly over the coals and let it preheat for 3–4 minutes, or until the oil shimmers.

3. Sauté the Snow Peas
Add a small amount of oil to the hot skillet, then toss in the snow peas. Sauté for 3–4 minutes, stirring occasionally, until they blister slightly but still retain a good snap.

4. Optional: Add C.S.H.
If you want to bring the heat, sprinkle in Ranch & Rifle’s C.S.H. rub during the last minute of cooking.

🔥 Note: Cooking peppers in oil amplifies their heat — so the earlier you add C.S.H., the spicier it will get. Add at the end for a mild pop or earlier for serious kick.

5. Serve Immediately
Remove from heat and serve hot as a side to grilled meats, burgers, or even on top of a rice bowl.
