Charcoal-Grilled Wings That Hit Every Note

This recipe is all about layers of flavor. We season the wings generously with Ranch & Rifle’s A.P. Seasoning for that perfect savory base, then grill them over hot charcoal to crisp up the skin and lock in that fire-kissed flavor. Right before they come off the grill, we finish them with a dusting of Hot Honey seasoning to give each bite just the right balance of heat and sweetness.

1. Prep the Wings

Pat the wings dry with paper towels. Toss them in a large bowl with olive oil to coat, then season generously with Ranch & Rifle A.P. Seasoning. Let them sit while you prep the grill — this gives the seasoning time to work into the skin.

2. Fire Up the Charcoal

Light a charcoal grill for direct heat. Bank your coals to one side if you want a two-zone fire, which allows you to sear over high heat and finish over lower heat if needed.

Let the grill get hot — you want a good sear when the wings hit the grate.

3. Grill the Wings

Place the wings directly over the coals, flipping occasionally to prevent flare-ups. Cook for about 20–25 minutes, until the skin is blistered and crispy and the internal temp hits at least 175°F (wings are better cooked to 185°F+ for that fall-apart texture).

4. Finish with Hot Honey

As the wings come off the grill, while they're still piping hot, dust them with Ranch & Rifle Hot Honey Seasoning. Toss or flip them on a tray to get even coverage — the residual heat helps the seasoning melt slightly into the crispy skin.

5. Serve Hot

Pile the wings high and serve immediately. These don’t need much — maybe a little hot sauce, a squeeze of lemon, or just a cold beer on the side.

Tips

  • The A.P. seasoning is your workhorse for savory flavor — use it like salt and build on it.

  • The Hot Honey finish adds flavor, not mess. It's great for serving at events where sticky sauces aren’t ideal.

  • Want a little more heat? Hit the wings with extra Hot Honey seasoning as they rest.
