Homemade Sister Schubert-Style Rolls
Warm, buttery, pull-apart rolls—just like Grandma used to make.
Ingredients
4 ½ cups all-purpose flour
2 cups tempered (warm, not hot) water
1 tbsp active dry yeast
⅓ cup honey
1 tsp salt
2 tbsp melted butter (plus more for brushing)
Instructions
Step 1: Activate the Yeast
In a large mixing bowl, whisk together the warm water and honey until combined. Sprinkle in the yeast and let it sit undisturbed for 10 minutes, or until a thick, foamy layer forms on top. This step ensures your yeast is alive and ready to work.
Step 2: Make the Dough
Add the flour, salt, and melted butter to the activated yeast mixture. Mix until everything comes together into a shaggy dough. Knead by hand or with a dough hook for about 5–7 minutes, until smooth and elastic.
Step 3: First Proof
Lightly butter a clean bowl, place the dough inside, and cover with a towel or plastic wrap. Let it rise for 1 hour in a warm spot until roughly doubled in size.
Step 4: Punch & Fold
After the first rise, gently “punch down” the dough to release air. Perform one round of stretch and folds (folding each edge of the dough into the center). This helps strengthen the gluten structure for that signature soft, chewy texture.
Step 5: Divide and Shape
Cut the dough in half, then divide each half into 6 pieces (for a total of 12 rolls). Using floured hands or a floured surface, roll each piece into a smooth ball.
Step 6: Second Proof
Arrange the dough balls in a greased baking pan, placing them side by side so they’ll touch once they rise. Cover and let proof again until the rolls expand and just begin to touch—about 30–45 minutes depending on room temperature.
Step 7: Bake
Preheat your oven to 350°F. Bake uncovered for 20 minutes, or until the tops begin to turn golden brown.
Step 8: Finish with Butter (Optional but highly recommended)
Remove the rolls from the oven, brush with melted or softened butter, and return them to the oven for another 5–10 minutes until beautifully browned and glossy.
Step 9: Enjoy
Let the rolls cool slightly before serving—but let’s be honest, they’re best warm. Serve alongside a slab of butter, or use them to sandwich leftover BBQ for a next-level treat.
Pro Tip: These rolls freeze great! Let them cool completely, then wrap tightly. To reheat, cover with foil and warm in a 300°F oven for 10–15 minutes.
