Sweet, Spicy, and Smoky Wings with Blue Cheese Dressing

There’s nothing quite like wings cooked over live fire. The C.S.H. rub brings together smoky chipotle, savory soy, and a hint of honey sweetness that caramelizes perfectly over charcoal. Paired with a cold blue cheese dressing, it’s a combo that punches hard and cools clean.

Perfect for game day, backyard hangs, or any day that ends in “Y.”

Ingredients

For the Wings:

  • 2–3 lbs chicken wings, separated into flats and drums

  • 1½ tbsp Ranch & Rifle C.S.H. seasoning

  • 1 tbsp olive oil

For the Blue Cheese Dressing:

  • ½ cup sour cream

  • ¼ cup mayonnaise

  • ½ cup crumbled blue cheese

  • 1 tbsp white wine vinegar or lemon juice

  • 1 small clove garlic, grated or finely minced

  • Salt & black pepper to taste

  • Optional: splash of buttermilk to thin, if needed

Instructions

1. Preheat the Grill
Light your charcoal grill and set it up for two-zone cooking (direct and indirect heat). Let the coals burn until ashed over and the grill hits around 375–400°F.

2. Season the Wings
Pat the wings dry with paper towels. Toss with olive oil and C.S.H. seasoning until well coated. Let them sit while the grill comes up to temp.

3. Make the Dressing
In a small bowl, combine all the ingredients for the blue cheese dressing. Mix well and adjust thickness with a splash of buttermilk or water if needed. Season to taste with salt and pepper, then refrigerate until ready to serve.

4. Grill the Wings
Start the wings indirect, lid closed, for about 15–20 minutes, flipping once. Then move them over direct heat for the final 5–7 minutes to crisp and char the skin, flipping frequently to avoid burning. Watch for flare-ups.

5. Rest & Serve
Let the wings rest for a couple minutes off the heat, then plate and serve alongside a bowl of chilled blue cheese dressing.
