Sausage & Potato Foil Packets

There’s something special about throwing dinner straight into the fire. These foil packets are simple, hearty, and full of smoky flavor — the kind of meal that hits the spot whether you’re at camp or in the backyard.

Ingredients

  • 1 lb smoked sausage, sliced into bite-sized pieces

  • 4–5 small potatoes, diced (Yukon Gold or red work great)

  • 1 small onion, sliced

  • 1 bell pepper, chopped

  • 1 tablespoon olive oil (or a quick spray of cooking oil)

  • 1 tablespoon Ranch & Rifle’s Fall Purpose or Hot Honey (depending on your flavor mood)

  • Salt and pepper to taste

  • Optional: shredded cheddar, chopped parsley, or a drizzle of BBQ sauce to finish

Instructions

  1. Prep the packets:
    Tear 4 large sheets of heavy-duty aluminum foil. Spray each lightly with oil to prevent sticking.

  2. Assemble:
    Divide the sausage, potatoes, onion, and peppers evenly among the foil sheets. Drizzle with olive oil and season generously with The Fall Purpose and/or Hot Honey rub.

  3. Seal it up:
    Fold each foil sheet into a packet — seal the edges tightly to trap in steam and flavor.

  4. Cook:

    • On the grill: Place over medium heat (around 400°F) for 25–30 minutes, flipping halfway through.

    • Over a campfire: Place near the coals, not directly in the flames. Rotate occasionally for even cooking.

  5. Check doneness:
    Carefully open one packet (watch the steam!) — the potatoes should be tender and slightly browned.

  6. Serve:
    Open the packets, top with cheese, parsley, or a drizzle of BBQ sauce if you’d like, and dig in straight from the foil.

Notes

These packets are easy to customize — toss in mushrooms, jalapeños, or even corn for extra flavor. They also make cleanup a breeze, which means more time to relax by the fire with a cold one in hand.
